Sandeep Bains is a man keen not to follow the curve, but to stay ahead of it.
In the eight years since he transformed a derelict pub into a convenience store, he had introduced a Subway to generate more on-the-go sales. And in the first months of the coronavirus pandemic, he was innovating and improving once again, launching a delivery service in February 2020 and starting to think about a store refit in July.
